Log Cabin Original Syrup

This is one of those items where there are broad differences in choices. Some people like real maple syrup, some like the syrup that has butter in it, some like thick syrup, and some, like me, prefer good, old Log Cabin original – not sugar free. When I was young, it was the only syrup I recall anyone having, other than the real stuff. But, I will have to say that Log Cabin tasted better back then. It was more mapley. Could just be my tastebuds, but my brain recalls a richer flavor.

Growing up in the north, where there are plenty of maple trees, I knew many people who made their own syrup. As a kid, we thought it was quite the novelty to tap the four trees in our front yard and use the sap to make syrup. We gathered gallons and gallons and we thought we’d have buckets of syrup…not the case. After days of cooking the liquid over a wood fire, we got about 3/4 of a cup of finished product. Pretty disappointing and on top of that, it had flecks of ash in it and tasted smokey. My suspicion for this less than satifactory result was that my brother, who was manning the flames, had been partaking in our precious product.  We got smarter the next year, when once again, we collected buckets and buckets of sap and were sure the previous paltry result was due to evaporation from being cooked over an open flame, so Mom cooked it on the stovetop over a low flame. Guess what? Same result without the ash and smokey taste. The bottom line? It didn’t taste as good as Log Cabin to me. Nowaways, I just wish they’d add a little more maple flavor, but I’m glad they removed the high fructose corn syrup, which by the way, is some people’s idea of syrup.

Know how to make syrup when you run out of Log Cabin? Put 1 cup of water in a small saucepan, add some brown sugar, probably about 1/2 to 3/4 cup, some maple flavoring (if you have any), and a pat of butter. Cook over medium heat until it reduces and thickens up a bit. You can serve it warm or let it cool, as it will thicken a bit more that way.
