You need a little cheese to go with the Carr’s crackers, so here are a few of my current favorites:

Sartori’s Bellavitano. I actually went to the Sartori cheese factory last summer to get some! It’s a bit dry and somewhat like a parmesan without the scent, but it’s sooooo buttery and has little crystals that pop in your mouth. Yum-o, to quote Rachael Ray. Let it get to room temperture before cutting or it will crumble.

Parrano – another yummy cheese that’s similar in flavor to Bellavitano, but less crumbly. I buy it at Whole Foods.

Comte – this one is a bit nutty and sweet. It’s a kind of gruyere cheese and dries out quickly, so keep it covered. I get this at Whole Foods, too.

As a former Wisconsonite, cheese is in my veins.
